We did quite a bit of cooking today. First we made oatmeal chocolate chip cookies using this recipe, but we left out the nuts and added about 1/4 cup more chocolate chips. They were delicious and much better than the recipe on the inside of the Quaker Oats box, in my opinion! Harper also ate quite a bit of the dough and didn’t get sick, so I count that as another plus.
For dinner we made one of our favorites, Sara Foster’s Chicken with Lemon, Artichoke and Capers. I love this recipe because it is SO fast and easy and the kids actually eat it. They only eat the chicken, but at least they are getting the flavor of the rest of it. We serve it over egg noodles – I especially like the lemon pepper ones from Trader Joes. We don’t often have an open bottle of white wine in the house, so I substitute Marsala, since I usually have that. It works just as well as wine.
