Peach Cobbler

I am posting this recipe because it is seriously the best cobbler ever, and I really need to get the sticky-note with the recipe scribbled on it off of my desk! The recipe is from my stepmom and it is phenomenal. Enjoy.

Peach Cobbler
Preheat oven to 375.

Combine a lot of sliced peaches (I probably use 8-10) – skin on is fine – with 2 Tbsp tapioca. Put in a greased, shallow glass baking dish and set aside. In another bowl, combine:

1 cup flour
1 cup shredded sweetened coconut
3/4 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt

Cut in 1/2 cup cold, unsalted butter until the mixture is all crumbly. Stir in 1/2 cup chopped pecans, then stir in 1 egg (lightly beaten) until it is thoroughly combined.

Sprinkle topping evenly over the peaches and bake for 40-50 minutes until peaches are bubbly and topping is golden brown and crispy.

Feel free to substitute other fruit!
